Shami Kabab Popular Food in Pakistan
Shami Kebab is a popular food in the Pakistani cuisine and it is equally in Afghanistan and India. It is prepared with small amount of minced meat, ground chickpeas, eggs and lots of spices. The egg white is used to hold it tightly together.
History of Shami Kebab
Shami kebab also known as Syrian Kebab was introduced in the South Asia during the Mughal era with the migration of Muslims from Middle East. The Muslims got employments in the royal kitchens and the credit of its invention goes to a highly talented chef of a toothless Nawab of Lucknow.
Recipe of Shami Kebab
- Cooking Time: 25 Minutes
- Serving: 4 to 6
Ingredients
- ½ kg of Beef or Mutton Mince
- 1 cup of Bengal gram
- 1 teaspoon white cumin
- 1 teaspoon whole coriander
- 8 to 10 garlic cloves
- 1 inch ginger piece
- Salt according to your taste
- 8 to 10 whole red chili
- 1 tablespoon yogurt
Patty Spices
- ½ bunch of chopped mint
- ½ bunch of chopped green coriander
- 3 chopped green chilies
- Chopped ginger
- 1 egg white
- 1 tablespoon rice flour
Instructions for the Preparation
- Take a large skillet and add mince, Bengal gram, whole coriander, white cumin, ginger, garlic cloves, a pinch of salt, red chilies and yogurt with 2 glasses of water.
- Let it cook until the water has dried and remove it from the heat to let it cool for the sometime.
- Grind the meat mixture in the food processor, or you can do it manually in the mortar and pestle. After grinding the mixture, add mint, green coriander, chopped ginger, salt, greet chili, egg white and rice flour, knead the mixture well.
- Take almost 1 tablespoon of the mixture in the center of your wet palm and shape it into a smooth, but flat round shape. Prepare as many kebabs as you want, and heat a pan after adding enough oil into it.
- Add 3 to 4 kebabs at one time and let them fry at low heat to get the crispy golden color. The shami kebabs are ready; you can serve them with ketchup or green sauce.
Variations in the Shami Kebab
In the some areas of Pakistan like Punjab, the boneless beef or mutton is taken instead of mince. You can fry the shami kebab with egg white instead of adding it into the mixture.
Uses of Shami Kebab
The shami kebabs may be taken with hot sauce, raita, chili garlic sauce, tomato sauce or chutney. These are really popular in the Hyderabad and normally eaten with rice or chapatti.
